WELLINGTON CELEBRATES ALL THINGS BUBBLY!

 September celebrates spring, life, vibrancy and all things bubbly in Wellington!

MCC or Méthode Cap Classique is the term used to describe South African sparkling wines made in the traditional French method (methode champenoise). Our wine route has outstanding MCC-producers. Let us raise a glass to them and celebrate bubbles and life!

 

 

Upland’s Earthsong MCC is an unfined, vegan wine which is sulphate free. This sparkling wine from chenin blanc and pinot noir has lovely fresh tropical fruits with hints of forest floor aromas and background vanillas.

Linton Park’s Brut MCC was raised in the bottle for 30 months. This delightfully dry and graceful Methodé Cap Classique was made in the traditional French method. Chardonnay and Pinot Noir feature in the blend with clear citrus notes on both nose and palate. Zesty bubbles bounce from glass to mouth as the wine delivers a lingering aftertaste. This is one of only 600 bottles produced, hand-made and hand labelled.

Linton Park’s Rose MCC is dry in style. Their bright salmon pink Methodé Cap Classique is a sheer delight to all the senses. Hand-made and hand labelled this bottle is one of only 600 produced. Garden-fresh strawberries and silky cream are evoked on the nose and follow to the smooth yet textured mouthfeel. Each glass is invigoratingly confident with a gentle line of natural acidity and energetic bubbles which linger.

Faith, hope and love is the Bosman Family motto and it is a philosophy which the extended farm family live by every single day. We all know one, a loose cannon. Their bubbly has such a character: handle with care.

The current volume is from 2015, bottled for second fermentation on 16 April 2015, disgorged November 2018. The base wine for this MCC was derived from a field blend of Chardonnay 66%, Pinot Noir 17% and Pinot Meunier 17%. It has a beautiful hue reminiscent of pink apple. It is a great aperitif and celebration tipple, but also a multi-faceted food wine which compliments a range of dishes from salads to pastas, smoked salmon to sushi.

The Van Zijl Brut 2017 is part of this range. All the grapes were handpicked in bins. The whole bunches were gently pressed in pneumatic presses to collect the purest juices, known as cuvee. After one day of settling, the juice was fermented in stainless steel tanks bout 15-17°C using specially selected yeast strains. No malolactic fermentation was done, preserving the freshness of the wine. The wine underwent secondary fermentation in the bottle and was aged on the lees for a further 15 months.
